Tasting Notes
The bright golden colour and the outstanding honey suckle blossoms citrus and biscuity aromas place this sparking wine well above the everyday Australian ‘bubbly’. Made from premium quality Chardonnay and Pinot Noir grapes from the famous Barossa region. The dramatic opening characteristics are followed by an impressive intensity of flavour and long crisp finish. A celebratory sparkling wine of great elegance. Traditional fermentation in this bottle.

Vineyard Notes
The Chardonnay and Pinot Noir grapes were carefully picked by hand, and whole bunch pressed. The trellis system is a two wine vertical for canopy management. The vines are detail hand pruned to limit cropping levels, and to maximise the fruit flavours.

The Pinot Noir is especially picked early and lightly pressed in a airbag press to minimise colour “pick up” from the skins.

Vintage Report
A moderately cool late summer allowed the Chardonnay grapes to fully mature. The slow ripening levels of grape sugars formed delicate fruit aromas with depth of flavour and well balanced with crisp acidity.

Winemaking Report
The Chardonnay and Pinot Noir fruit was sourced from Eden Valley where the cool climate conditions are optimal for producing grapes with flavour ripeness and high levels of natural acidity. The evident rich fruit characters and creamy mouth-feel on the palate are a result of both the pinot noir fruit and the extended 30 months ageing on lees in the bottle. The 2000 vintage is a blend of 76 % Chardonnay, and 24 % Pinot Noir.
